Compost Cookies Recipe


Ingredients:


  • 1 cup unsalted butter, softened

  • 1 cup brown sugar

  • ½ cup granulated sugar

  • 1 tsp vanilla extract

  • 2 large eggs

  • 1 ½ cups all-purpose flour

  • ½ tsp baking powder

  • ½ tsp baking soda

  • 1 tsp kosher salt

  • 1 cup chocolate chips

  • ½ cup butterscotch chips (optional)

  • 1 cup crushed pretzels

  • 1 cup crushed potato chips

  • ½ cup rolled oats

  • ½ cup shredded coconut or graham cracker crumbs (optional)



Instructions:


  1. Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.

  2. In a large bowl, cream butter and sugars until light and fluffy.

  3. Beat in vanilla and eggs until combined.

  4. In another bowl, whisk flour, baking powder, baking soda, and salt.

  5. Gradually mix dry ingredients into the wet mixture.

  6. Stir in chocolate chips, butterscotch chips, oats, pretzels, chips, and any extras.

  7. Scoop dough into balls (about 2 tablespoons each) and place on baking sheets.

  8. Chill for 15–30 minutes if you want thicker cookies.

  9. Bake 10–12 minutes or until edges are golden brown. Let cool on the tray 5 minutes before transferring.



Pro tip: Don’t overthink the mix-ins—this is your chance to use up cereal dust, leftover nuts, or that last handful of popcorn. Just keep it around 3–4 cups of fun stuff total.
